BAKSO


Bakso is a typical and very popular  food in Indonesian. Even Mr. President Obama like Bakso.

There are several kinds of bakso. There are beef bakso, shrimp bakso, fish bakso, chicken bakso, ect.

This time recipe is Beef Bakso

For beef bakso  use fresh beef and low,  becouse it will produce the best quality bakso

Seasoning and cooking ingredient:
250 grams beef, milled untill smooth
125 grams flour
25 cc water
1/2  tablespoon salt
2 cloves garlic, crushed
1/2 teaspoon pepper
750 cc chicken broth
1 leek, thinly sliced

How to make
1. Cut meat into small pieces, then cut it again into fine pieces using a sharp knife or food processor or blender. After that, puree the flesh, flush with ice cubes or ice water (10-15% of weight of meat) and salt (and other spices) until the dough is elastic and so easily formed.

2. Add the dough with  flour to make it more chewy. The addition about 15-20% by weight of the meat, it is for taste for meat remains prominent. In addition to flour add salt, garlic, and pepper, squeeze / stir as he added a little water until dough is smooth.

3. After getting the desired dough, you can directly shape the Bakso with 2 tablespoons. Take the dough with a spoon, shape Bakso with one spoon and another spoon helped. For those who are proficient can use a hand.

4. Boil the dough directly into boiling water until cooked. usually lasts 10-15 minutes. and then lifted , drained, and cooled.

Tips :
1 Milled / chopped meat as gently as possible untill resemble cream/pasta

2. To get the bakso mill distinguished smooth, add 1 tablespoon cooking oil

3.To get a chewy bakso, you can use baking soda. Use baking soda to taste (about 2  1 / 4 teaspoon to 2 a half cup finely minced meat).

4. To obtain hard meatballs reply, use tapioca flour (tapioca starch).
