Shrimp Paste or Fish Paste
Terasi is very famous in Indonesia. Aroma and flavor is very distinctive. There are two kind of Terasi,They are shrimp terasi and fish terasi . Terasi made from fish that were preserved and processed through fermentation, milling or pulverization and drying which more and last for 20 days. In addition to fish and shrimp, a mixture of Terasi is salt that functions as a preservative.
Raw material
a. Fish Terasi (Fish paste)
Some types of fish that is often used as raw materials for Terasi fish, which most famous is Teri fish (small fish that has been marinated). Head of the fish must be cut off before further processing
The raw materials used in making shrimp paste is small shrimp with length about 1 cm - 2.1 cm , and wide about 0.3 cm with a whitish color
Supplementary materials
a. Salt:
Two functions of salt. For the taste of shrimp paste and as a preservative
b. food coloring
Food coloring just for decoration. Into the shrimp paste are added frequently brown or red color, and in the fish paste are added frequently blackish color (mix red and green). The concentration of coloring used, tailored to the needs, and allowed by the government regulation.
c. Banana leaf or plastic
Useful for wrapping and fermentation process.
How To Make:
- Fish or shrimp washed cleanly and then drained
- Add salt 5% of the weight of shrimp or fish and food coloring and then mix evenly.
- Place mixture in a pan with flatten to thickness 1-2 cm
- Dried under sunshine until half-dry. Stirred during drying.
- Minced / mashed with tools crusher until smooth and formed like lumps
- Wrapped the lumps with a dried banana leaves or plastic. Leave on for one or two days.
- Drying back and crushed again. Drying time is 3-4 days
- Create the lump again and wrapped again in dried banana leaves
- Stored for 1-4 weeks, the fermentation process is running, wait until the typical smell of shrimp paste comes up. Done
